It is very unlikely that the old fashioned white tea produced without any rolling would become so fragrant and so sweet in its liquer. This new technique of gently rolling after the withering process makes it much intense in its flavor. It’s aroma thus resemble the barrique barrel after a good red wine is bottled. The taste is rather sweet and mellow. Can be boiled.
