2015 Fuding Laoshu Baicha


White tea is produced in the south of China in the Fujian province around the city of Fuding, which is traditionally processed by first drying in direct sunlight and later drying in partial shade. Tea processed in this way requires the least amount of human intervention. During traditional processing, the kneading process (rolling of the leaves) does not take place, which would create bitter and bitter tannins in the leaf, but it remains naturally sweet.
